Stewed Chicken

Ingredients
  • 3-4 lbs chicken
  • 1 small onion, wedged
  • 1 rib, celery
  • 1 tsp parsley
  • 1 tsp thyme
  • 1 tsp rosemary
  • 3 tsp salt
  • ¼ tsp pepper
  • 3-4 C hot water
Steps

  • Place chicken in slow cooker.

  • Add remaining ingredients.

  • Cover and cook low for 8 hours.

  • Use broth as a base to make gravy.

  • Thicken broth with flour-water paste.

  • Stir chicken into gravy.

Crescent Chicken

Crescent Chicken

Ingredients
  • 1 pkg crescent rolls
  • 2 C shredded chicken
  • 1 C shredded cheese
  • 1 can cream of chicken soup
  • 1 can milk
Steps

  • Preheat oven to 350°

  • Prepare soup using milk and set aside.

  • Separate crescent rolls.

  • Spoon chicken and cheese into each roll.

  • Roll and seal to enclose filling.

  • Place in 13×9 inch dish.

  • Pour soup over rolls.

  • Bake at 350° uncovered for 30 minutes.

Momma’s Jambayala

Being a cajun by birth, jambalaya is one of my favorite meals. Here’s how we do it at my house.

Momma’s Jambayala

Ingredients
  • 1 lb Sausage, cooked
  • 1 lb Chicken,cooked
  • 1 lb Shrimp,cooked 
  • 2 C Uncle Ben’s Converted Rice
  • 1 10 oz can French Onion Soup
  • 1 8 oz can Tomato Sauce
  • 1 14 oz can Beef Broth
  • 1 Bell Pepper
  • 1 bunch Green Onions
  • 2 stalks Celery
  • 1 stick Butter
  • parsley, salt, pepper, and Tony Chachere’s to taste
Steps

  • Mix ingredients.
  • Cover and bake 1½ hours at 350°.

Creamed Chicken

IMG_9330One of the recipes I ate most growing up as a child is also one of the simplest and cheapest that I can make. My Granny and her sister alway make this when we go to visit one of them. If you are looking for a way to say in your grocery budget this is the recipe for you.

Creamed Chicken

Ingredients
  • 4 TBS butter
  • ½ C flour
  • ½ C milk
  • 3 C chicken broth
  • 1 chicken, cut up and deboned
  • salt and pepper to taste
Steps
  • Boil chicken
  • While chicken is cooling, melt butter in another pot.
  • Add flour and milk.
  • Whisk together so as not to lump.
  • Salt and pepper to taste.
  • Add broth from chicken and then add chicken pieces.
  • Simmer 5 minutes.
  • Serve over rice.

Meal Planning

Hey y’all! I mentioned meal planning in a previous post and I thought I would share a little more on how I do it. I am also including my meal plan for February and will add some of my recipes soon. Many of the recipes I am using can be found on Pinterest but several of them are my own or family recipes.

At our house we have a set day for leftovers. So you will see on the calendar that every Thursday is left over night. We go to Bible study on Thursday’s so this is easiest for us. We also have pizza once and week and either hot dogs or corn dogs once a week. We make home fries on hot dog nights instead of buying frozen once to save money.

Last month, through meal planning, I was $164 UNDER my grocery budget. Y’all that is HUGE!! Without meal planning I was blowing our budget by several hundred dollars every month. This is truly a budget saver.

One of the best parts of meal planning is that after this year I will have a binder with each month’s calendar and the recipes listed in order behind each calendar. I will have a great basis for each year to come, even if we don’t stick to the exact meal plan.

Let’s Talk Planners

I mentioned previously about using a planner to keep myself organized. In the past I have used Erin Condren, and Plum Paper Design. This year I went with a planner that I found on Etsy and printed at home. Y’all, it is AWESOME! The set up is similar to the other planners I have used in that it has sections for morning, day, and evening. It is also very brightly colored like the others. But there is so much more than that! My planner comes with pages for menu planning, monthly expenses, and to do lists.

There are three different size options for printing. I chose to print mine on full size legal paper. I love the extra room that it gives me when filling in my plans for each day. It is also available in A4 and A5 sizes. For just $10 I downloaded the file and printed it in my chosen size. You could easily just print this planner out and put it in a binder, I however, chose to have my planner bound at my local office supply store. It cost me around $4 to have this done. I printed a planner cover that I also bought from etsy and laminated it at home with my Scotch laminator. You could also have a cover laminated at the office supply store if you don’t own a laminator.

New year…Better Mom

Y’all, let’s just be real, we all have made New Year’s resolutions that we failed at miserably. This year though, it’s going to be different for me. While visiting with a friend last week she said she wanted to be a better version of herself this year. What a great way to look at the new year! There is no resolution to change herself in any way, just to be better. I think we can all agree that we can give that a go and most likely succeed. I have set a few plans in place for myself, and so far I am doing ok with them.

First, I got a really great planner.I have tried Erin Condren and Plum Paper Planners in the past. This year I bought a planner from a little Etsy shop that is similar to both of the other ones I have used but it is not dated AND it comes in three sizes. The best part is that it was only $10. I printed it at home and had it bound together at my local office store for around $4. So for less than 15 bucks I have a planner that is full letter size and I can use all year round. I will do a full review on this planner some other time.

I have never planned meals ahead in the past. Just hoped we would have something to eat when supper time rolled around. Usually that led us to eating out, which meant spending money that could have been better allocated elsewhere. I participated in a meal swap with several friends at the end of last year and it totally changed my ideas about supper. I now use a really cool website to store my recipes and plan my meals a month at a time. More about that later.

My favorite thing that I am doing to be a better me is changing up my prayer time. After watching the movie War Room I decided I needed a dedicated space for prayer. We don’t have a ton of extra room around here so I cleared out my vanity and turned it into my prayer space. I have scriptures and prayers hanging up around my vanity, and all of my Bible Journaling supplies are stored inside. This gives me a special place to worship in peace. A place that I can go with no distractions. And to me the best way to be a better mom is to be a more dedicated Christian.
